Coffee Mocha Fudge Recipe
Tasty Coffee Mocha Fudge
A fudge for the caffeine freak in all of us!
Ingredients
- 3 cups sugar
 - 1 ½ cups (or approx 6 oz) chocolate coating or wafers chopped
 - ¾ cup milk
 - ½ cup liquid coffee cream non-dairy
 - 1/4 cup nuts finely chopped
 - 2 tbsp instant coffee
 - 2 tbsp butter
 - 1 tbsp light corn syrup
 - 1 tsp vanilla essence
 
Instructions
- In a saucepan, combine the sugar, milk, coffee, coffee cream and corn syrup.
 - Stir a couple of times to combine, then cover and bring to the boil.
 - Remove the lid and put a cooking thermometer in the pan. DO NOT STIR.
 - Cook until mixture reaches 112 degrees Celsius (or 236 degrees F).
 - Remove from heat source.
 - Add in butter and vanilla essence STILL WITHOUT STIRRING.
 - Allow the mixture to cool to lukewarm.
 - Beat the mixture until it starts to thicken.
 - Pour the yummy fudge into a greased 8” square pan and set aside.
 - In a double-boiler, melt the chocolate coating.
 - Pour the melted chocolate over the fudge, making sure to spread it out evenly.
 - Sprinkle the chopped nuts on top of the chocolate.
 - Remember to cut the fudge into squares BEFORE the fudge sets.
