Tasty Coffee Mocha Fudge

A fudge for the caffeine freak in all of us!


  • 3 cups sugar
  • 1 ½ cups (or approx 6 oz) chocolate coating or wafers chopped
  • ¾ cup milk
  • ½ cup liquid coffee cream non-dairy
  • 1/4  cup nuts finely chopped
  • 2 tbsp instant coffee
  • 2 tbsp butter
  • 1 tbsp light corn syrup
  • 1 tsp vanilla essence


  • In a saucepan, combine the sugar, milk, coffee, coffee cream and corn syrup.
  • Stir a couple of times to combine, then cover and bring to the boil.
  • Remove the lid and put a cooking thermometer in the pan. DO NOT STIR.
  • Cook until mixture reaches 112 degrees Celsius (or 236 degrees F).
  • Remove from heat source.
  • Add in butter and vanilla essence STILL WITHOUT STIRRING.
  • Allow the mixture to cool to lukewarm.
  • Beat the mixture until it starts to thicken.
  • Pour the yummy fudge into a greased 8” square pan and set aside.
  • In a double-boiler, melt the chocolate coating.
  • Pour the melted chocolate over the fudge, making sure to spread it out evenly.
  • Sprinkle the chopped nuts on top of the chocolate.
  • Remember to cut the fudge into squares BEFORE the fudge sets.
